Words we never thought we would say.. how to prepare your kitchen for a shutdown. After 37+ years in the business, we have never experienced anything like this before, and we’re sure you haven’t either! That’s why we’ve put together a list of three things you can do to prepare for a shutdown, and how to be proactive with your equipment maintenance during this time. Now more than ever we have to stick together to get through this difficult and trying time due to COVID-19.

Deep Cleaning

The number one thing you should be doing before you close your kitchen down during the COVID-19 outbreak is a thorough deep clean. We have a variety of food-safe cleaners, sanitizers, and disinfectants in stock at our warehouse. Although every sanitizer is different, it is imperative that you follow the proper sanitizing instructions on your bottle. Some cleaners require 5 to 10 minutes to properly sanitize surfaces.

Our recommendations:

Arrex-100Arrex-100 is recommended for sanitizing, disinfecting, and odor-controlling in food plants, dairy farms, and in food service operations. No potable rinse is required.
Lemon Power Bleach CleanerPowerful ready to use bleach cleaner / destainer with lemon clean scent.
Enviro Floor CleanLoaded with environmentally beneficial microbes, this product will help maintain clean floors, control odor, and food sources for fruit flies.
Lavender ExpressLavender Express is a special multi-purpose cleaner and degreaser formulated for removing soil, grease and grime from any washable surface.
Clean Hands Liquid ABA luxury liquid Anti-Bacterial hand soap with a pleasant fragrance, kills germs and gentle on hands.


Ice Machine Maintenance and Cleaning

Have you been putting off cleaning your ice machine(s) all year? Summer is when you use your ice machine the most, so this is the perfect time to take advantage of this “downtime” and service your ice machine. Take one look inside your commercial ice machine and I’m sure you will be pretty surprised at what you find. Ice machines are a breeding ground for mold, slime, and a variety of other unsanitary bacteria such as salmonella and E. coli. Buildup inside of your ice machine can also cause longer harvest times and reduced capacity. It is also important to frequently inspect the components inside your machine for any wear or damage.

Shutting Down Equipment

Hot-side equipment, fryers, and refrigeration should all be properly shut down in any period of extended absence. This ensures the safety of your building and equipment, so you don’t come back to any unforeseen surprises!
